Serve this chicken salad on chips, or use the chips as dippers! For a heartier meal, add some black beans and corn mixed into the salad. From Cooking Light. Quick and Easy to make since it uses a store-bought rotisserie chicken.

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 3/8 teaspoon kosher salt
  • 1/8 teaspoon black pepper, freshly ground
  • 2 cups rotisserie chicken breasts, shredded
  • 1/4 cup fresh cilantro, chopped
  • 3/4 cup salsa, hot
  • 1 - ripe avocado, peeled and diced
  • 3 ounces tortilla chips

How To Make avocado chicken salad

  • Step 1
    Combine first 4 ingredients in a medium bowl, stirring with a whisk. Add chicken and cilantro; toss to combine.
  • Step 2
    Gently fold in salsa and avocado.
  • Step 3
    Serve with chips.
