Ingredients For zesty potato salad

  • 4 md
    unpeeled potatoes, cooled, cut into bite size pieces
  • 1/2 sm
    sweet onion, finely minced
  • 1/4 c
    spanish olives, finely chopped
  • 2 lg
    eggs, hard boiled, coarsely chopped
  • 1/2 can
    tuna, drained, flaked, optional
  • MAYONNAISE DRESSING
  • 1/4 c
    mayonnaise
  • 1/2 - 1 Tbsp
    sherry vinegar
  • 1 Tbsp
    lemon juice, fresh
  • 1 Tbsp
    coarse mustard
  • 1/2 tsp
    paprika, smoked
  • 1/8 tsp
    garlic salt & onion salt
  • 1/4 tsp
    fresh ground black pepper
  • sm
    drizzle virgin olive oil
  • GARNISHES
  • 1 lg
    hard boiled egg, peeled, chilled, sliced
  • 1 Tbsp
    fresh parsley, finely chopped
  • 1/2 - 1 Tbsp
    fresh cilantro, finely chopped, optional

    black olives, quartered
  • 1/2 tsp
    paprika, for sprinkling

How To Make zesty potato salad

  • 1
    In a small bowl add all the mayonnaise dressing ingredients and mix well. Taste and season with a pinch of sea salt and more black pepper if necessary. Then set aside until needed.

    In a large bowl gently add the prepared potatoes, onions, olives, eggs and tuna. Now add the mayonnaise dressing and gently mix until just combined. Cover and put in fridge to chill until needed.

    When ready to serve garnish the salad with the egg slices, parsley, cilantro, olives and a few pinches of paprika.
