Ingredients
- 4 medium unpeeled potatoes, cooled, cut into bite size pieces
- 1/2 small sweet onion, finely minced
- 1/4 cup spanish olives, finely chopped
- 2 large eggs, hard boiled, coarsely chopped
- 1/2 can tuna, drained, flaked, optional
- MAYONNAISE DRESSING
- 1/4 cup mayonnaise
- 1/2 - 1 tablespoons sherry vinegar
- 1 tablespoon lemon juice, fresh
- 1 tablespoon coarse mustard
- 1/2 teaspoon paprika, smoked
- 1/8 teaspoon garlic salt & onion salt
- 1/4 teaspoon fresh ground black pepper
- small drizzle virgin olive oil
- GARNISHES
- 1 large hard boiled egg, peeled, chilled, sliced
- 1 tablespoon fresh parsley, finely chopped
- 1/2 - 1 tablespoons fresh cilantro, finely chopped, optional
- 6 - black olives, quartered
- 1/2 teaspoon paprika, for sprinkling
How To Make zesty potato salad

Step 1In a small bowl add all the mayonnaise dressing ingredients and mix well. Taste and season with a pinch of sea salt and more black pepper if necessary. Then set aside until needed.

Step 2In a large bowl gently add the prepared potatoes, onions, olives, eggs and tuna. Now add the mayonnaise dressing and gently mix until just combined. Cover and put in fridge to chill until needed.

Step 3When ready to serve garnish the salad with the egg slices, parsley, cilantro, olives and a few pinches of paprika.
