sweet potato salad

I love potato salad but was told by my dietitian to try to eat more sweet potatoes/yams with my diabetes. So for the Memorial Day BBQ we had this year I put together this recipe and it was amazing! Even my husband liked it. He does not like different foods normally but he could not stop talking about this salad.

Ingredients
- 2 - 3 medium sweet potatoes or yams boiled but firm
- 2 sticks celery, chopped
- 1/2 of 11 cans mandarin oranges or pineapple
- 1 tablespoon chopped fresh parsley
- 1/2 cup light mayonnaise
- 6 teaspoons orange or pineapple juice (depending on what fruit you use)
- 1 tablespoon agave syrup
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
How To Make sweet potato salad

Step 1Boil sweet potatoes or yams about 15 minutes. Make sure they are still firm so they do not mash. Drain mandarin oranges or pineapple (whichever you decide to use). Chop celery and parsley. Cool potatoes and cut into 3/4 inch cubes.

Step 2In a jar combine the mayonnaise, juice, agave syrup and spices and shake to combine. Chill in refrigerator until potatoes have cooled.

Step 3Combine all ingredients and chill 30 - 60 minutes (best when served cold) Serve
