This recipe came from my mom who took it to church socials for Memorial Day or Fourth of July. She thought it was good to take to socials since there were no eggs or mayo in it.

Ingredients
- 1 1/2 pounds red potatoes, unpeeled
- 1/2 cup green bell pepper, chopped
- 1/2 cup red bell pepper, chopped
- `1.2 cup yellow bell pepper, chopped
- 1/2 cup celery, chopped
- 1/2 cup pitted ripe olives, halved
- 1/2 cup fresh parsley, chopped
- 2 - green onions, thinly sliced diagonally
- 1/2 cup olive oil
- 1/4 cup spicy brown mustard
- 3 tablespoons lemon juice
- 1 teaspoon salt
- 1 teaspoon dried oregano leaves
- 1/8 teaspoon pepper
How To Make patriotic potato salad

Step 1Wash and quarter potatoes. Cook potatoes in boiling water to cover 10 minutes or until tender. Drain.

Step 2Place potatoes in a large bowl. Add green peppers and the next 6 ingredients; toss gently.

Step 3Combine olive oil and remaining ingredients in a bowl; Whisk to combine. Pout the mixture over the vegetables. Toss gently. Cover and chill before serving.
