creamy potato salad
My husband grew up on this potato salad. His mother, got the recipe from her mother! So it's been in the family for a very long time. I hope you like it!

Ingredients
- 2 1/2 pounds boiled red potatoes, with the skins on
- 1 cup celery, cut very small
- 2 bunches green onions, cut up to the green, cut very small
- 1 cup miracle whip, divided
- 1 teaspoon sugar
- - half and half
- - salt and pepper to taste
- 2 - hard boiled eggs, sliced
How To Make creamy potato salad

Step 1When boiled potatoes are cool enough to handle, remove the skins.

Step 2Cut the potatoes into nice bite-sized pieces. Now coat the potatoes with 1/2 cup of Miracle Whip.

Step 3Mix in the chopped celery and green onion. Salt and pepper to taste.

Step 4In a separate bowl, mix the other 1/2 cup of Miracle Whip, 1 teaspoon of sugar, and enough half and half to thin down slightly (probably about 1/8 cup of half and half).

Step 5Pour on top of potatoes and mix well. Place potato salad in a serving bowl, and top with sliced hard-boiled eggs. *** After making this recipe for so many years now, I chop up the hard-boiled eggs and mix them into the potato salad. I add 2 or 3 eggs to the mix.

Step 6Chill until serving. Enjoy!
