Ingredients
- 12 medium to large idaho potatoes wash and boil with the skins on.
- 6 large eggs hard boiled
- 1/2 cup sweet relish
- 1 cup low fat mayo
- 1 large onion sweet vadalia chopped
- 3 large stalks of celery diced
- 2 medium sweet banana peppers diced
- 1/2 teaspoon salt kosher or salt to taste
- 1 teaspoon coarse pepper
- 1 1/4 teaspoons mustard
- 1/4 pinch paprika, sweet mild

Step 1After potatoes are cooked cool off for 1/2 hr. chop eggs onions and celery put in refrigerator to keep cold. Cut up potatoes with skins on in cubes. Mix all other ingredients with potatoes once potatoes are cool.Paprika is sprinkled on for garnishment. Refrigerate for at least 2hr before serving.
