A good old family standby. This is a must-have for any family get together. We are on the fourth generation with this recipe. Hope you enjoy it too.

After one bite, we can see why this is Beverly's go-to potato salad recipe. It's delicious! The creamy mustard mayo dressing with the soft potatoes is a great contrast to the crunchy bits of celery and pickles. Make sure to add this to your cookout menu this summer. So good!

Ingredients

  • 4-6 large russet potatoes peeled, diced, and boiled
  • 6-8 large hard-boiled eggs, diced
  • 1 cup chopped dill pickles
  • 1 medium onion, chopped
  • 1 cup chopped celery
  • 2-3 tablespoons prepared mustard
  • 3/4-1 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

How To Make mustard potato salad

  • Ingredients in a bowl.
    Step 1
    Put all ingredients in large bowl. Mix well.
  • All ingredients mixed together.
    Step 2
    Adjust seasoning as needed. May need more mustard, salt, pepper, or mayonnaise
  • Bowl covered in plastic wrap.
    Step 3
    Refrigerate until cold. Overnight is best for flavors to blend. Enjoy.
