This is a decadent potato salad...and worth the try to make it...if you like loaded baked potato you are going to love this potato salad. Tweaked to my liking. You tweak to yours.Enjoy!

Ingredients
- 7 medium potatoes
- 1/2 cup mayonnaise
- 1/2 cup dairy sour cream
- 1/2 cup soft butter
- 1/2 cup shredded extra sharp cheddar cheese
- 1/4 cup fresh chopped chives, divided
- 8 slices thick bacon, chopped and fried crisp
- - salt and pepper to taste
How To Make loaded potato salad

Step 1In a medium bowl whisk together the mayonnaise , sour cream and butter; blend well Stir in 3 Tablespoons of the chopped chives and salt and pepper to taste.

Step 2Fold in the cheese and bacon (reserve a bit of cheese and bacon for the topping). Cover and chill for 30 minutes.

Step 3Peel and cube the potatoes to 1/2-inch cubes and cook in salted water till al dente. Drain. Cool slightly.

Step 4Fold in the cooled dressing . Pour into serving bowl and garnish with a bit of bacon and chives. Serve warm or cold.
