I am not used to using measurements in my dishes. But this one has a lot to do with personal taste. Enjoy!!

5 lb
red bliss potatoes
1 medium
red onion (diced)
scallions (green onions) (chopped)
garlic cloves (minced fine)
1 bunch
italian parsley (chopped)


1 1/4 c
olive oil, extra virgin
1/4 c
red wine vinegar
2 tsp
1 pinch
red pepper flakes
salt and pepper (to taste)

How to Make Italian style potato salad


  • 1Wash potatoes and boil in salted water until just tender. Set aside in fridge to cool for about 1/2 hour or until potatoes are easy to handle.
  • 2Mix together dressing and set aside.
    Cut potatoes in bite size pieces leaving the skins on.
    Toss potatoes with rest of ingredients, including dressing. It is best to mix while potatoes are still a little warm.
  • 3Chill in fridge for at least one hour. Check for seasoning, you may need more or less vinegar depending on your taste.
