italian style potato salad

Ingredients
- 5 pounds red bliss potatoes
- 1 medium red onion (diced)
- 6 - scallions (green onions) (chopped)
- 3 - garlic cloves (minced fine)
- 1 bunch italian parsley (chopped)
- DRESSING
- 1 1/4 cups olive oil, extra virgin
- 1/4 cup red wine vinegar
- 2 teaspoons sugar
- 1 pinch red pepper flakes
- - salt and pepper (to taste)
How To Make italian style potato salad

Step 1Wash potatoes and boil in salted water until just tender. Set aside in fridge to cool for about 1/2 hour or until potatoes are easy to handle.

Step 2Mix together dressing and set aside. Cut potatoes in bite size pieces leaving the skins on. Toss potatoes with rest of ingredients, including dressing. It is best to mix while potatoes are still a little warm.

Step 3Chill in fridge for at least one hour. Check for seasoning, you may need more or less vinegar depending on your taste.
