german potato salad
This a favorite in my family. Please understand I am guessing on the time line for prep and cooking. I always take less then an hour , but I really never pay attention to how much time the steps take. A simple easy recipe to put together and comfort food at it's finest.

Ingredients
- 6 slices bacon
- 1/2 cup onion chopped
- 4 tablespoons sugar
- 2 tablespoons flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup water
- 1/3 cup vinegar
- 4 cups cooked chopped potatoes
- - fresh parsley
How To Make german potato salad

Step 1In a large skillet fry bacon until crisp

Step 2remove bacon , saute onions in pan drippings until crisp tender.

Step 3Add sugar, flour and salt & pepper, blend and cook until the mixture is smooth and bubbly , stirring constantly.

Step 4carefully add water and vinegar stirring as you add to keep the sauce smooth. Cook on medium high heat until sauce boils, lower the heat to medium and cook to thicken.

Step 5Stir potatoes into the pan, mix well to coat the potatoes, heat on medium low heat until heated through.

Step 6Crumble the cooked bacon and stir half of it into the potatoes.

Step 7Spoon into serving dish and top with remaining bacon and parsley.

Step 8Serve warm
