I love this mock potato salad!! I've eaten this as a complete meal. You can double this to keep in the fridge for meals during the week. 1 serving = 1 meal.

Ingredients

  • 2 cups raw cauliflower
  • 1 cup celery, diced
  • 4 - green onions
  • 6 - eggs, hard boiled
  • 3 tablespoons safflower mayo
  • 8 ounces tofu
  • 1/2 cup egg salad dressing
  • 2 teaspoons chopped pimentoes

How To Make dieter's potato salad

  • Step 1
    Mix all the ingredients together.
  • Step 2
    EGG SALAD DRESSING: 3 HARD BOILED EGGS 2 TSPS. WATER 3 TSPS. APPLE CIDER VINEGAR 2 TSPS. LEMON JUICE DASH SALT DASH PEPPER DASH ONION AND GARLIC POWDER
  • Step 3
    Blend all in blender until creamy. 1/3= 1 oz. protein
