There is no wrong combination as to what you put in this -- whatever you have or want to put in. I usually go for color.

Ingredients

  • 16 - 20 ounces twist noodles or elbow or tri-color
  • 2 medium sweet onions or 4-bunches of green onion
  • 1 medium red, orange, yellow or green pepper
  • 2 medium zucchini or cucumbers
  • 1 package radishes
  • 1 package grape tomatoes
  • 3 - 4 - celery stalk
  • DRESSING:
  • 16 ounces mayonnaise
  • 1/4 cup milk
  • 1/8 cup vinegar
  • 1 tablespoon sugar
  • - salt and pepper to taste

How To Make vegie pasta salad

  • Step 1
    Cook and drain noodles. Rinse in cool water.
  • Step 2
    Dice all vegetables...just cut the grape tomatoes in half. Substitute/add any raw vegetable that you prefer (cauliflower, broccoli, etc.) Mix as you add vegetables to get desired color mix - You may want more or less of items!
  • Step 3
    Put all dressing ingredients in a jar. Shake thoroughly. Pour over salad mix - turn and toss well. Cover and refrigerate (overnight, if possible). Mix before serving. I keep salt/pepper nearby, so others can season to taste. ENJOY! This makes a huge bowl, but does not stay long, when others start dishing it up! Light and goes well in a picnic environment.
