My hubby loves this pasta salad in the summer when the days are, "just to hot for hot meals".

Ingredients

  • 6 large tomatoes cut into bite size chunks
  • 4 medium cucumbers peeled cut into bite size chunks
  • 2 medium sweet onions diced
  • 1 jar 12 ounces sliced green olives with pimentoes drained
  • 1/2 cup banana peppers diced
  • 1 teaspoon fresh garlic in the jar
  • 1 teaspoon lemon pepper
  • 1 cup cheese, shredded your choice
  • 1-13.25oz box penne pasta whole grain or your choice
  • 1 cup italian salad dressing

How To Make tomato cucumber pasta salad

  • Step 1
    Prepare pasta by directions on box, Do not over-cook the pasta. Drain well, rinse with cold water untill cool to the touch.Place pasta in large bowl. Add garlic,lemon pepper mix well till pasta is coated.
  • Step 2
    Add the prepared tomatoes,cucumbers,onions,olives,banana peppers,italian dressing(add less or more dressing to your taste) and toss till mixed and coated well with dressing. Do not add shredded cheese till salad has been placed into serving bowl.Cheese tends to get soggy and pale when mixed in the salad and placed in the refrigerator, caused from moisture.
  • Step 3
    Cover tightly with lid,place in refrigerator chill for 1 hour before serving.
