smoked mackerel, greens & pasta salad

it was my first time to make this salad for dinner...and wow! I fell in love with this salad. my hubby loved this so much, that when i was about to have some of the left-over, he ate them already. He said, i should make this often. So, i made this again.

Ingredients

  • 200 grams dried pasta bows
  • 400 grams skinless and boneless hot-smoked(or just smoke) mackerel or salmon fillets
  • 6 - spring onions, sliced diagonally into short lengths
  • 1 - cucumber, cubed
  • 300 grams cherry tomatoes, halved
  • 2 sticks celery stalks, thinly sliced
  • 60 grams watercress
  • FOR THE DRESSING:
  • 4 tablespoons kraft light french dressing
  • 100 grams low-fat natural yogurt
  • - juice of 1 lemon
  • - small handful of fresh dill, finely chopped
  • - a very small bunch of fresh chives, finely choped
  • - salt and freshly ground black pepper
  • - ground chili flakes, optional

How To Make smoked mackerel, greens & pasta salad

  • Step 1
    Cook the pasta according to the packet instructions. Drain and rinse under cold water, then drain again and transfer to a large salad or serving bowl.
  • Step 2
    Break the mackerel or salmon into flakes and add to the pasta with the spring onions, cucumber, cherry tomatoes, celery, and watercress.
  • Step 3
    In a separate bowl, mix together the dressing ingredients and season to taste with salt and pepper. Drizzle the dressing over the salad and carefully toss to combine. Serve. Note: If uses just smoked mackerel or salmon, u can add ground chili flakes, drizzle on the salad.
