In the hot summer months here in Florida, I am always looking for something cold to serve! This recipe fits the bill, but is still filling.

Ingredients
- 10 ounces bay scallops
- 2 tablespoons butter, melted
- 6 ounces small shell macaroni, uncooked
- 11 ounces can mandarin oranges
- 1 cup garbanzo beans (canned)
- 6 ounces package frozen snow pea pods, thawed
- 2 tablespoons green onions, finely chopped
- 1/4 cup vegetable oil
- 1/4 cup white wine vinegar
- 1 teaspoon grated orange rind
- 1/2 teaspoon salt
- 1/2 teaspoon dry mustard
- 1 dash ground red pepper
- 1/3 cup sunflower kernels, toasted
- lettuce leaves
How To Make pasta salad with scallops

Step 1Sautte scallops in butter in a large skillet over medium heat 3 to 4 minutes or until the scallops are opaque. Drain and set aside.

Step 2Cook the macaroni according to the package instructions. Drain. Rinse with cold water, and drain well.

Step 3Combine the reserved scallops, macaroni, oranges, garbanzo beans, snow peas, and green onions in a large bowl.

Step 4Combine the oil and the next 5 ingredients in a glass jar. Shake well until combined. Pour the dressing over the macaroni mixture. Toss gently.

Step 5Cover and chill. Serve on lettuce leaves. Sprinkle with the sunflower kernels.
