A great salad to serve with your favorite grilled meat. Feel free to add optional ingredients listed in the recipe or add anything you wish.

Ingredients

  • DRESSING
  • 3 tablespoons white vinegar (or red/white wine vinegar)
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh basil (or 2 tsp. dried)
  • 2 tablespoons chopped green onions
  • 2 tablespoons grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano
  • SALAD
  • 3 cups uncooked rainbow rotini (spiral pasta)
  • 1 medium red or green bell pepper, cut into 1/4 inch strips (can use two different color peppers if you wish)
  • 1 medium tomato, cut into wedges
  • 6 ounces feta cheese, crumbled (1 1/4 cups)
  • - additional ingredients if you wish: olives, artichoke hearts, red onion or anything you wish to add

How To Make pasta salad - greek-style

  • Step 1
    In a jar with a tight-fitting lid, combine all dressing ingredients; shake well. Set aside.
  • Step 2
    Cook rotini to desired doneness as directed on package. Drain; rinse with cold water.
  • Step 3
    In a large bowl, combine cooked rotini and remaining salad ingredients. Pour dressing over salad; toss gently to coat. Serve immediately
