my summer pasta salad

When the weather is too hot to cook, I like to put together this cool and delicious pasta salad. It goes great with everything~ hamburgers, hot dogs, sandwiches, etc. If you put cooked chicken in the salad, you will have a complete meal.

Ingredients For my summer pasta salad

1 mdcucumber

1 mdyellow squash
-
1 mdzucchini
-
1red bell pepper
-
1green bell pepper

4 cfresh broccoli florets
-
3 cfresh cauliflower florets

1 smred onion, finely chopped
-
2 pkgitalian salad dressing mix (good seasons)

116 oz box bow tie pasta (or your favorite pasta)

1/4 colive oil
-
1/4 cred wine vinegar
-
3/4 tspsalt
-
1/2 tsppepper
How To Make my summer pasta salad

1Wash the first 5 ingredients. Chop and transfer to a large bowl. Add the remaining vegetables. Sprinkle with dry salad dressing mix; toss to coat. Refrigerate, covered, at least 2 hours. (can be refrigerated overnight, if you want to prepare veggies ahead of time).

2Cook pasta according to package directions. Drain; rinse with cold water, drain again. Add to vegetable mixture. In a small bowl, whisk together the remaining ingredients. Add to the salad; toss to coat. Serve and enjoy.
