my summer pasta salad
When the weather is too hot to cook, I like to put together this cool and delicious pasta salad. It goes great with everything~ hamburgers, hot dogs, sandwiches, etc. If you put cooked chicken in the salad, you will have a complete meal.

Ingredients
- 1 medium cucumber
- 1 medium yellow squash
- 1 medium zucchini
- 1 - red bell pepper
- 1 - green bell pepper
- 4 cups fresh broccoli florets
- 3 cups fresh cauliflower florets
- 1 small red onion, finely chopped
- 2 packages italian salad dressing mix (good seasons)
- 1 - 16 oz box bow tie pasta (or your favorite pasta)
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
How To Make my summer pasta salad

Step 1Wash the first 5 ingredients. Chop and transfer to a large bowl. Add the remaining vegetables. Sprinkle with dry salad dressing mix; toss to coat. Refrigerate, covered, at least 2 hours. (can be refrigerated overnight, if you want to prepare veggies ahead of time).

Step 2Cook pasta according to package directions. Drain; rinse with cold water, drain again. Add to vegetable mixture. In a small bowl, whisk together the remaining ingredients. Add to the salad; toss to coat. Serve and enjoy.
