I concocted this one night while trying to figure out something to eat without going to the store. Very light, works well with mexican food.

  • 1 box
    tri colored rotini noodles
  • 2 small
    roma tomatoes
  • 1/2 medium
    red onion
  • 1 bunch
    cilantro, fresh
  • 3 Tbsp
    lime juice
  • 1 Tbsp
  • 1 1/2 Tbsp
    red wine vinegar
  • 1/8 c
  • ·
    salt and pepper to taste

How to Make Mucho Grande Pasta Salad


  1. Boil noodles in salty water as directed on the package. Drain.
  2. Mix oil, vinegar and lime juice in a bowl, add sugar and wisk.
  3. Chop onions, and tomatos into small pieces. Rough chop cilantro.
  4. Mix pasta and veggies in dressing toss, add salt and pepper to taste and put in the refridgerator. Stir before serving.
