I concocted this one night while trying to figure out something to eat without going to the store. Very light, works well with mexican food.

1 box
tri colored rotini noodles
2 small
roma tomatoes
1/2 medium
red onion
1 bunch
cilantro, fresh
3 Tbsp
lime juice
1 Tbsp
1 1/2 Tbsp
red wine vinegar
1/8 c
salt and pepper to taste

How to Make Mucho Grande Pasta Salad


  • 1Boil noodles in salty water as directed on the package. Drain.
  • 2Mix oil, vinegar and lime juice in a bowl, add sugar and wisk.
  • 3Chop onions, and tomatos into small pieces. Rough chop cilantro.
  • 4Mix pasta and veggies in dressing toss, add salt and pepper to taste and put in the refridgerator. Stir before serving.
