mint and white bean salad
My mother and stepdad came into town to visit my husband and I. We ventured to a new restaurant that supported local farmers, Elk Creek Cafe, which was amazing. The dish I selected came with a salad very similar to this. I love onion and mint and it is not very often that you can have both at the same time! Hope you enjoy my creation inspired by Elks Creek Cafe.

Ingredients
- 1/2 - red onion
- 1 box orzo pasta
- 4 sprigs chopped mint (fresh)
- 1 tablespoon olive oil
- 3 tablespoons garlic
- 2 cans white beans
- 2 tablespoons lemon juice
How To Make mint and white bean salad

Step 1Chop the onion into chunky slivers. squeeze a little lemon juice over it and add the olive oil. Set aside while preparing the other ingredients.

Step 2Cook the orzo pasta according to the directions. Drain and rinse with cold water.

Step 3Drain the white beans and combine with the other ingredients (including the onion and orzo) into a bowl and chill for an hour. This can be kept in the fridge for a few days.
