joyce's pasta salad

I got this recipe from a good friend of mine that she brought to potluck dinners at church. It was always a big hit. I still make it for church and at home.

Ingredients

  • 16 ounces rotini pasta or fusillli
  • 12 ounces feta cheese, crumbled
  • 1/2 cup kalmata olives-sliced
  • 1/2 cup sundried tomatoes-diced (i sqeeze out the oil)
  • 3 cups fresh spinach-finely sliced
  • 1/4 to 1/2 cup red onion, chopped
  • SAUCE
  • 1/2 cup olive oil
  • 3 tablespoons red wine vinegar
  • 2 to 3 cloves garlic, minced
  • 1/2 teaspoon salt, i add it to taste
  • - pepper to taste

How To Make joyce's pasta salad

  • Step 1
    Mix ingredients together and then add your sauce. Mix all together well. The extra garlic and salt just give it more flavor for my taste.
