irene's vegetable and macaroni salad

This came from a dear friend (who is no longer with us) many years ago. This makes enough to share and I never had a problem with having people to share it with. All who have tried it have loved it, even kids who didn't like onions :)

Ingredients

  • 1 pound elbow macaroni, cooked and drained
  • 1 large onion, chopped
  • 1 large green bell pepper, chopped
  • 4 - carrots, shredded
  • 1 can sweetened condensed milk, not evaporated
  • 1 cup white vinegar
  • 1 teaspoon salt
  • 1 cup sugar
  • 1/4 teaspoon pepper
  • 1 1/2 cups mayonnaise

How To Make irene's vegetable and macaroni salad

  • Step 1
    Cook macaroni until barely tender. Drain and rinse with cold water. Put in large bowl and set aside.
  • Step 2
    Add the vegetables to the macaroni and mix well.
  • Step 3
    Combine condensed milk, vinegar, sugar, mayonnaise, salt and pepper.Mix well. Add to the macaroni mixture and combine thoroughly.
  • Step 4
    Chill at least 4 hours before serving.
