hearty macaroni salad

I wanted a different macaroni salad and this one takes the cake. It has so many different vegetables, textures and flavors this is my all time favorite. Pinched from Better Homes and Gardens cookbook.

Ingredients

  • 1 cup elbow or wagon wheel macaroni
  • 3/4 cup cubed cheddar cheese
  • 2 stalks chopped celery
  • 1/2 cup frozen peas
  • 1/2 cup thinly sliced radishes
  • 2 tablespoons thinly sliced green onion or chopped onion
  • 1 cup mayo or miracle whip whichever you like better
  • 1/2 cup sweet or dill relish or sweet or dill chopped pickles
  • 2 tablespoons milk
  • 2 tablespoons horseradish mustard
  • 1/4 teaspoon salt
  • dash pepper
  • 2 - chopped hard boiled eggs

How To Make hearty macaroni salad

  • Step 1
    Cook pasta according to directions, drain.Rinse with cold water drain again.
  • Step 2
    In a large bowl combine cooked pasta, cheese, celery, peas, radishes, and green onion.
  • Step 3
    For dressing, in a small bowl, stir together the mayo, pickle/relish, milk, mustard, salt and pepper.
  • Step 4
    Pour dressing over pasta mixture. Add chopped eggs. Toss lightly to coat. Cover and chill for 4 to 24 hours. Before serving stir in additional milk to moisten.
