Ingredients

  • 2 tablespoons lemon juice
  • 1/4 cup plain, fat-free greek yogurt
  • 1 tablespoon olive oil, extra virgin
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 2 cups whole wheat penne pasta
  • 12 - cherry tomatoes, halved
  • 1 - cuumber, seeded and diced
  • 3/4 cup drained garbanzo beans
  • 1/4 cup sliced, pitted kalamata olives
  • 1/2 cup low-fat crumbled feta cheese
  • - pepper for seasoning

How To Make healthy greek pasta salad

  • Step 1
    In a bowl, whisk together lemon kuice, yogurt, oil, oregano and salt. Cook pasta as directed , drain, cool.
  • Step 2
    Add to dressing in lg bowl, the pasta. Add tomatoes, cucumber, beans and olives.. Let cool. Stir in feta cheese ans season w/ pepper.
