This is a pretty and tasty salad. I have found the longer it has to chill the better it tastes, but oh its hard to resist sometimes. I don't know where I got the recipe, but its definitely a keeper.

1 c
mayonnaise or salad dressing
1/4 c
chopped parsley
1 tsp
crushed, dried basil leaves
minced garlic clove
8 oz pkg mild natural cheddar cheese, cut into chunks
2 c
broccoli "flowers", cooked
1 c
tri-colored corkscrew noodles, cooked and drained (about 4 oz)
1/2 c
chopped nuts, optional
medium tomatoes, cut into thin wedges (for garnish)

1Combine salad dressing or mayonnaise, parsley, basil and garlic. Mix well. Add cheese, broccoli and noodles and mix lightly. Chill.
2To serve: Put salad on pretty platter and arrange tomato wedges around platter. Sprinkle salad with nuts if desired.
3Note: The only cooking involved with this recipe is with preparing the noodles and broccoli. To lower the fat content of this dish use low fat mayonnaise and low fat cheese.
