This is a pretty and tasty salad. I have found the longer it has to chill the better it tastes, but oh its hard to resist sometimes. I don't know where I got the recipe, but its definitely a keeper.

Ingredients

  • 1 c
    mayonnaise or salad dressing
  • 1/4 c
    chopped parsley
  • 1 tsp
    crushed, dried basil leaves
  • 1
    minced garlic clove
  • 1
    8 oz pkg mild natural cheddar cheese, cut into chunks
  • 2 c
    broccoli "flowers", cooked
  • 1 c
    tri-colored corkscrew noodles, cooked and drained (about 4 oz)
  • 1/2 c
    chopped nuts, optional
  • 2
    medium tomatoes, cut into thin wedges (for garnish)

How to Make Garden Pasta Salad

Step-by-Step

  1. Combine salad dressing or mayonnaise, parsley, basil and garlic. Mix well. Add cheese, broccoli and noodles and mix lightly. Chill.
  2. To serve: Put salad on pretty platter and arrange tomato wedges around platter. Sprinkle salad with nuts if desired.
  3. Note: The only cooking involved with this recipe is with preparing the noodles and broccoli. To lower the fat content of this dish use low fat mayonnaise and low fat cheese.
