This makes a great summertime lunch, or anytime lunch. Meat, pasta, veggies--what more could you ask for? Found this in my old, old recipe file. I don't think I made it more than once or twice because my son wouldn't eat anything with tomatoes in those days. Photo source: livedan330.com

Ingredients

  • 1 box (7-1/4 oz.) kraft mac & cheese dinner
  • 1 can (5 oz.) chunk chicken
  • 1/2 cup mayonnaise
  • 1/2 cup celery, sliced
  • 1/4 cup green onions, sliced
  • 4 large tomatoes
  • 4 large lettuce leaves
  • - fritos or doritos

How To Make fiesta stuffed tomatoes

  • Step 1
    Prepare the mac & cheese dinner as directed on package; drain.
  • Step 2
    Add chicken, mayo, celery and onion. Mix lightly and chill for about 2 hours.
  • Step 3
    Add more mayo before serving, if needed.
  • Step 4
    Cut each tomato in six sections, almost to the stem end. Fill with mixture. Serve on lettuce leaves, surrounded by chips.
