This makes a great summertime lunch, or anytime lunch. Meat, pasta, veggies--what more could you ask for? Found this in my old, old recipe file. I don't think I made it more than once or twice because my son wouldn't eat anything with tomatoes in those days. Photo source: livedan330.com

Ingredients
- 1 box (7-1/4 oz.) kraft mac & cheese dinner
- 1 can (5 oz.) chunk chicken
- 1/2 cup mayonnaise
- 1/2 cup celery, sliced
- 1/4 cup green onions, sliced
- 4 large tomatoes
- 4 large lettuce leaves
- - fritos or doritos
How To Make fiesta stuffed tomatoes

Step 1Prepare the mac & cheese dinner as directed on package; drain.

Step 2Add chicken, mayo, celery and onion. Mix lightly and chill for about 2 hours.

Step 3Add more mayo before serving, if needed.

Step 4Cut each tomato in six sections, almost to the stem end. Fill with mixture. Serve on lettuce leaves, surrounded by chips.
