easy chicken & rice salad
I saw this in a magazine not long ago but I wasn't satisfied until I'd tweaked it just a bit, due to some ingredients I didn't care for. Now it suits me and I hope it suits you too. Recipe & Photo: Tasteofhome.com

Ingredients
- 2 packages (8.8 oz. ea.) ready-to-serve long grain rice
- 2/3 cup thai peanut sauce
- 2 tablespoons canola oil
- 2 tablespoons water
- 1 package (16 oz.) coleslaw mix
- 2 packages (6 oz. ea.) ready-to-serve grilled chicken breast strips
- 1/2 cup torn parsley leaves
- 1 1/2 cups blanched peanuts, slightly crushed
How To Make easy chicken & rice salad

Step 1Prepare the rice according to package instructions; put into a large bowl.

Step 2In a small bowl, whisk the peanut sauce, oil, and water until blended; set aside.

Step 3Add the chicken, coleslaw mix, and parsley to the rice and mix well. Drizzle with peanut sauce mixture and toss to combine.

Step 4Sprinkle the salad with peanuts and serve with a slice of lime on the side.
