I make this whenever we have a BBQ and it always gets raves.

Ingredients

  • 1 cup uncooked macaroni pasta
  • 3/4 cup reduced-fat cheddar cheese, cubed
  • 1/2 cup celery, thinly sliced
  • 1/2 cup frozen green peas, thawed
  • 1/2 cup radishes, thinly sliced
  • 2 tablespoons thinly sliced green onions
  • 1/2 cup lite mayonnaise
  • 1/4 cup sweet dill pickle relish
  • 2 tablespoons milk
  • 1/4 teaspoon each salt and pepper
  • 2 - hard-boiled eggs, chopped

How To Make deli-style macaroni salad

  • Step 1
    Cook pasta as directed, drain. Run under cold water, drain again. In lg bowl, combine cooled pasta, cheese cubes, celery, peas, radishes and green onion.
  • Step 2
    In medium bowl, stir together mayonnaise, relish, milk, salt and pepper. Pour dressing over pasta mix.
  • Step 3
    Add eggs and toss gently to coat. Cover, chill for 4 hrs.
