artichoke italian pasta salad

I got this recipe from a good friend years ago and the artichokes and sun dried tomatoes make this salad very tasty.

Ingredients

  • 8 ounces spaghetti pasta ; cooked and drained
  • 1/2 cup roasted or sun dried tomatoes
  • 1/2 cup canned artichoke hearts ; drained
  • 1/4 cup kalamata (greek) olives ; sliced
  • 1/4 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 1/4 cup light olive oil
  • 1 tablespoon honey
  • 1 package zesty italian dressing mix

How To Make artichoke italian pasta salad

  • Step 1
    For the sauce : Mix the mayonnaise , vinegar , olive oil , honey together until smooth and creamy.
  • Step 2
    Toss the pasta , olives , artichokes , and the olives in a large mixing bowl and pour dressing on top and mix throughly.
  • Step 3
    Can be served immediately or chilled.
