yummy carrot salad

Another great and tasty carrot salad that I have been making. Do not make the day before or overnight. The salad will get soggy. Hint: If you have any leftovers and want to save for the next day...add another small grated carrot. I originally found the recipe on the Safeway.com web page that was submitted by Karena.

Ingredients

  • 3 large carrots, grated
  • 1 cup raisins (option)
  • 1 cup walnuts, chopped
  • 1/4 cup finely chopped celery
  • 2 tablespoons shredded coconut
  • DRESSING
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon white sugar
  • 1/4 teaspoon salt

How To Make yummy carrot salad

  • Step 1
    Add raisins, walnuts, celery, carrots and coconut to a medium size bowl.
  • Step 2
    Dressing: Mix together the mayonnaise, sour cream, vinegar, sugar and salt in a separate bowl
  • Step 3
    Add dressing to carrot mixture and stir until well coated. Cover and chill for a couple of hours before serving.
