Simple Mediterranean chilled white bean salad.

Ingredients

  • 2 cans (15 ounces each) cannellini beans, rinsed and drained
  • 14 ounces jar artichoke hearts packed in water, drained
  • 1 - red bell pepper, diced
  • 1/2 cup pitted kalamata olives, sliced
  • 1/4 cup diced red onion
  • 2 tablespoons chopped fresh italian parsley
  • 2 tablespoons chopped fresh mint
  • 1 tablespoon chopped fresh basil
  • 1/3 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • - salt and pepper
