Easy, refreshing, and healthy. I had this salad at a friend's house and loved it so much, she told me that it is on the back of the Wheat Berries package of Nature's Earthly Choice. The only change I made is that I used Craisins instead of raisins.

A scoop of this delightful salad with a few apple slices on a plate with some grilled chicken would make a lovely ladies luncheon entree! The simple substitution of dried cranberries for raisins adds so much in terms of both flavor and presentation.

Ingredients

  • 1 cup cooked wheat berries
  • 2 tablespoons dijon mustard
  • 1 teaspoon honey
  • 1 - sweet apple
  • - celery (desired amount)
  • - raisins or crainsins (desired amount)
  • 1/3 cup non-fat yogurt
  • 2 tablespoons lemon juice
  • 1/2 cup walnuts

How To Make wheat berry waldorf salad

  • Step 1
    Cook the wheat berries (1/2 cup of dry wheat berries with 1.5 cups of water). Drain and cool the cooked wheat berries.
  • Step 2
    Add the remaining ingredients and enjoy.
