  • ·
    4 cups seedless watermelon, cut into 2 inch pieces
  • ·
    1/2 cup thinly sliced red onion
  • ·
    1 large tomato, chopped
  • ·
    1 avocado, chopped
  • ·
    1/2 cup macadamia nuts, chopped
  • ·
    1/2 tsp salt
  • ·
    1/4 tsp freshly ground black pepper
  • ·
    2 tbsp finely chopped cilantro

  • ·
    1 1/2 limes, large, juiced
  • ·
    1 - 2 tsp sugar, optional
  • ·
    1/2 cup plain yogurt

How to Make Watermelon Salad


  1. In a small bowl add the lime juice, sugar and yogurt. Mix well and set aside until needed.
  2. In a large bowl add the following ingredients: watermelon, red onion, tomato, avocado and macadamia nuts. Mix gently.
  3. Season with the salt, pepper and cilantro. Gently toss the salad and serve.
  4. Garnish with the Lime Drizzle.
