Ingredients

  • 1 small
    butternut squash--chopped
  • 2
    apples--chopped (red delicious or granny smith)
  • 1/2
    red onion--chopped
  • 1 c
    brussel sprouts--cleaned & chopped
  • 2 Tbsp
    olive oil
  • 1/4 c
    crumbled feta cheese
  • 1/4 tsp
    cardamom
  • ·
    chopped fresh parsley--for garnish
  • ·
    salt & pepper to taste

How to Make WARM AUTUMN SALAD

Step-by-Step

  1. PREHEAT OVEN TO 400 DEGREES
  2. LAY SQUASH, APPLES, BRUSSEL SPROUTS & ONIONS ON BAKING SHEET. DRIZZLE WITH OIL & ADD CARDAMON, SALT & PEPPER. MIX THOROUGHLY
  3. ROAST FOR 45-50 MINS., TOSSING EVERY 15 MINS. REMOVE VEGTABLES & LET COOL FOR 5 MINS.
  4. ADD VEGTABLES TO A BOWL & COMBINE WITH FETA CHEESE & PARSLEY. SERVE IMMEDIATELY.
