This goes well with my Colorado Sloppy Joes, is easy to make and tastes delicious! Like it all on it's own for lunch:)

Ingredients

  • 1/2 - head chinese cabbage or bok choy, sliced
  • 1/2 - head red or purple cabbage, shredded
  • 1-2 - gala or green apples, seeded, and chopped fine
  • 2 - stalks celery, washed trimmed, and finely chopped
  • 2 - carrots, grated
  • 1/2 - red onion
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon coarse salt (or to taste)
  • 1/2 teaspoon stone ground mustard
  • 3/4 cup real mayonaise
  • 1/4 cup rice vinegar
  • 1/4 cup sugar (i tasted mine and added a sprinkle more at the end)
  • 1/2 cup finely chopped walnuts or almonds

How To Make walnutty coleslaw

  • Step 1
    Take the last 6 ingredients--without the nuts- and combine stirring well to make dressing.
  • Step 2
    Combine the veggies and chopped fruit -mix well.
  • Step 3
    Add the dressing and nuts in layers to the veggie, fruit mixture to incorporate well.
  • Step 4
    Refrigerate at least 2 hours to chill well--and enjoy!
