This goes well with my Colorado Sloppy Joes, is easy to make and tastes delicious! Like it all on it's own for lunch:)

Ingredients
- 1/2 - head chinese cabbage or bok choy, sliced
- 1/2 - head red or purple cabbage, shredded
- 1-2 - gala or green apples, seeded, and chopped fine
- 2 - stalks celery, washed trimmed, and finely chopped
- 2 - carrots, grated
- 1/2 - red onion
- 1/2 teaspoon celery seed
- 1/2 teaspoon coarse salt (or to taste)
- 1/2 teaspoon stone ground mustard
- 3/4 cup real mayonaise
- 1/4 cup rice vinegar
- 1/4 cup sugar (i tasted mine and added a sprinkle more at the end)
- 1/2 cup finely chopped walnuts or almonds
How To Make walnutty coleslaw

Step 1Take the last 6 ingredients--without the nuts- and combine stirring well to make dressing.

Step 2Combine the veggies and chopped fruit -mix well.

Step 3Add the dressing and nuts in layers to the veggie, fruit mixture to incorporate well.

Step 4Refrigerate at least 2 hours to chill well--and enjoy!
