A definite family favorite, I make this many times throughout the summer when our garden produces grape tomatoes. I have also served this at Easter, July 4th, Memorial Day, Christmas, and Thanksgiving, as my family always asks me to make it.

Ingredients For tomato feta salad

6 cgrape or cherry tomatoes

3/4 lbFeta cheese

1 smred onion, chopped
-
2 Tbspminced fresh basil leaves

2 Tbspminced fresh parsley

1/4 cextra-virgin olive oil
-
3 Tbspchampagne vinegar or white whine vinegar

1 tspKosher salt
-
1/2 tspfreshly ground black pepper
How To Make tomato feta salad

1Cut the tomatoes in half and place them in a large bowl.

2Dice the Feta into 1/4 inch dice, crumbling as little as possible.

3Add Feta, chopped onion, basil, and parsley to the tomatoes.

4Combine the oil and vinegar.

5Pour over the tomato mixture. Toss. Add salt and pepper to taste.

6Serve chilled or at room temperature.
