A definite family favorite, I make this many times throughout the summer when our garden is producing grape tomatoes! I have also served this at Easter, July 4th, Memorial Day, Christmas & Thanksgiving as my family always asks me to make it! Enjoy!

Ingredients For tomato feta salad

  • 6 c
    grape or cherry tomatoes
  • 3/4 lb
    feta cheese
  • 1
    small red onion, chopped
  • 1/4 c
    extra virgin olive oil
  • 3 Tbsp
    champagne vinegar (or white whine vinegar)
  • 1 tsp
    kosher salt
  • 1/2 tsp
    freshly ground black pepper
  • 2 Tbsp
    minced fresh basil leaves
  • 2 Tbsp
    minced fresh parsley

How To Make tomato feta salad

    Cut the tomatoes in half & place in large bowl.

    Dice the feta into 1/4 inch dice, crumbling as little as possible.

    Add feta, chopped onion, champagne vinegar, olive oil, salt, pepper, basil & parsley to tomatoes.

    Toss carefully and salt to taste. (Sometimes feta is very salty, so may not need to salt at all).

    Serve chilled or at room temperature.
