tomato feta salad

A definite family favorite, I make this many times throughout the summer when our garden produces grape tomatoes. I have also served this at Easter, July 4th, Memorial Day, Christmas, and Thanksgiving, as my family always asks me to make it.

Ingredients For tomato feta salad

  • 6 c
    grape or cherry tomatoes
  • 3/4 lb
    Feta cheese
  • 1 sm
    red onion, chopped
  • 2 Tbsp
    minced fresh basil leaves
  • 2 Tbsp
    minced fresh parsley
  • 1/4 c
    extra-virgin olive oil
  • 3 Tbsp
    champagne vinegar or white whine vinegar
  • 1 tsp
    Kosher salt
  • 1/2 tsp
    freshly ground black pepper

How To Make tomato feta salad

    Cut the tomatoes in half and place them in a large bowl.

    Dice the Feta into 1/4 inch dice, crumbling as little as possible.

    Add Feta, chopped onion, basil, and parsley to the tomatoes.

    Combine the oil and vinegar.
  • 5
    Pour over the tomato mixture. Toss. Add salt and pepper to taste.

    Serve chilled or at room temperature.
