tomato feta salad
A definite family favorite, I make this many times throughout the summer when our garden produces grape tomatoes. I have also served this at Easter, July 4th, Memorial Day, Christmas, and Thanksgiving, as my family always asks me to make it.
Blue Ribbon Recipe
Serve this tomato Feta salad alongside a piece of grilled fish or grilled chicken for a fantastic summer side dish. The cherry tomatoes are sweet compared to the tangy dressing and the savory Feta cheese. Basil and parsley add another layer of fresh flavor. Chopped onions add a little bite, but the flavor is not overpowering. The dressing is a little tart. If you want to sweeten it up, add a little honey to taste.

Ingredients
- 6 cups grape or cherry tomatoes
- 3/4 pound Feta cheese
- 1 small red onion, chopped
- 2 tablespoons minced fresh basil leaves
- 2 tablespoons minced fresh parsley
- 1/4 cup extra-virgin olive oil
- 3 tablespoons champagne vinegar or white whine vinegar
- 1 teaspoon Kosher salt
- 1/2 teaspoon freshly ground black pepper
How To Make tomato feta salad

Step 1Cut the tomatoes in half and place them in a large bowl.

Step 2Dice the Feta into 1/4 inch dice, crumbling as little as possible.

Step 3Add Feta, chopped onion, basil, and parsley to the tomatoes.

Step 4Combine the oil and vinegar.

Step 5Pour over the tomato mixture. Toss. Add salt and pepper to taste.

Step 6Serve chilled or at room temperature.
