This is a great way to use the abundance of tomatoes we grow in the summer, even the kids like this.

Ingredients

4 large
ripe, sliced tomatoes
2 large
sliced cucumbers
1 large
thinly sliced onion

fresh basil leaves, chopped
1/2 c
unseasoned rice vinegar
1 Tbsp
soy sauce
1 Tbsp
sesame oil
2 Tbsp
honey
1 small
piece of minced fresh ginger

How to Make Tomato, cucumber salad

Step-by-Step

  • 1In a small bowl mix vinegar, soy sauce, sesame oil, honey and minced ginger. Set aside.
  • 2In large bowl mix tomatoes, cucumbers, onion and basil leaves.
  • 3Pour vinegar mixture over vegetables and toss well. Cover and refrigerate for at least an hour before serving.
