This is a great way to use the abundance of tomatoes we grow in the summer, even the kids like this.

Ingredients
- 4 large ripe, sliced tomatoes
- 2 large sliced cucumbers
- 1 large thinly sliced onion
- 10 - fresh basil leaves, chopped
- 1/2 cup unseasoned rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons honey
- 1 small piece of minced fresh ginger
How To Make tomato, cucumber salad

Step 1In a small bowl mix vinegar, soy sauce, sesame oil, honey and minced ginger. Set aside.

Step 2In large bowl mix tomatoes, cucumbers, onion and basil leaves.

Step 3Pour vinegar mixture over vegetables and toss well. Cover and refrigerate for at least an hour before serving.
