Ingredients
- 2 large tomatoes, cut into bite size pieces
- 1 red onion, thinly sliced
- 2 small seedless cucumber (or 1 large), seeded and cut into bite size pieces
- 1 bell pepper (red, green or yellow), roasted, skin peeled, and sliced
- 1/3 cup olives, pitted
- 2 tablespoons parsley, chopped
- 5 ounces feta cheese, cubed
- 4 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- salt, to taste
- pepper, to taste
- pinch dry oregano
How To Make tomato, cucumber, and roasted pepper salad

Step 1Place the first five ingredients in a large bowl.

Step 2In the meantime whisk together in a smaller bowl the olive oil, salt and lemon juice.

Step 3Pour this over the vegetables in the first bowl. Toss them lightly together then place it in a serving plate.

Step 4On top of that add feta cheese and season with black pepper, oregano and drizzle some olive oil.

Step 5Serve.
