A simple Mediterranean Salad.

Ingredients

  • 2 large tomatoes, cut into bite size pieces
  • 1 red onion, thinly sliced
  • 2 small seedless cucumber (or 1 large), seeded and cut into bite size pieces
  • 1 bell pepper (red, green or yellow), roasted, skin peeled, and sliced
  • 1/3 cup olives, pitted
  • 2 tablespoons parsley, chopped
  • 5 ounces feta cheese, cubed
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • salt, to taste
  • pepper, to taste
  • pinch dry oregano

How To Make tomato, cucumber, and roasted pepper salad

  • Step 1
    Place the first five ingredients in a large bowl.
  • Step 2
    In the meantime whisk together in a smaller bowl the olive oil, salt and lemon juice.
  • Step 3
    Pour this over the vegetables in the first bowl. Toss them lightly together then place it in a serving plate.
  • Step 4
    On top of that add feta cheese and season with black pepper, oregano and drizzle some olive oil.
  • Step 5
    Serve.
