Some of my favorite items,tomatoes,avocados and asparagus. Makes a great salad anytime but I usually make it in the summer when the tomatoes are really good.

  • ·
    1 lb asparagus,trimmed and cut in half
  • ·
    6 c cherry tomatoes,cut in half
  • ·
    1/2 c feta cheese
  • ·
    1/2 c basil leaves,torn
  • ·
    1/4 c extra-virgin olive oil
  • ·
    2 t. lemon juice
  • ·
    2 t. dijon mustard
  • ·
    1/2 t each salt and freshly ground black pepper

How to Make Tomato and Asparagus Salad


  1. Boil asparagus in a large pot of salted water for 2 minutes. Drain and rinse with ice water.
    Mix xcooled asparagus with remaining ingredients,stirring well to coat everything with the dressing. Chill.
