tabouli salad

This Recipe was given to me when my son was 9 years old. It is really good. Tabouli is a mediterranian salad. It goes great any meal, and keeps exceptionally well. The lightness of bulger {cracked Wheat} mixed with ripe plum tomatoes, cucumber, red onion and lots of chopped parsley makes for an extra- refreshing summertime salad.

Ingredients

  • 1 cup bulgur wheat, uncooked, heaping
  • 1 cup cold water
  • 1/2 cup fresh lemon juice
  • 2/3 cup olive oil, extra virgin
  • 1 cup italian parsley chopped
  • 1/2 cup red onion, diced finely
  • 2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1 teaspoon coarse black pepper
  • 4 large plum tomatoes, seeded and cut in 1/2 inch slices
  • 1 large cucumber, peeled, seeded, cut in 1/2 inch slices

How To Make tabouli salad

  • Step 1
    Combine bulger, water, lemon juice, and 1/3 cup of the olive oil in a large bowl. mix well, set aside for 30 minutes at room temperature.Then fluff minture with fork. Add parsley, onion, garlic, pepper, salt, and remaining olive oil. Toss well with fork, Add the tomatoes and cucumber, and toss again. Adjust the seasonings if necessary, and allow to stand loosely covered, For at least 30 minutes for the flavors to come out. Then eat and enjoy.
