I love cucumbers and vinegar and this is just one of the many ways I like to make it. It's a very refreshing way to start a summer meal.

Ingredients

  • 1/2 cup sugar
  • 1/2 cup hot water
  • 1/4 cup white vinegar
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 large cucumber, thinly sliced
  • 1 small red onion, thinly sliced
  • 1/2 - jalapeno pepper, deseeded and finely diced
  • 1 tablespoon cilantro, fresh, roughly chopped
  • - crushed redpepper flakes for garnish (optional)

How To Make sweet and tangy cucumber salad

  • Step 1
    Whisk sugar, hot water, vinegar, salt and black pepper in a bowl until sugar has dissolved.
  • Step 2
    Add the cucumber, onion and cilantro into the vinegar mixture and stir well.
  • Step 3
    Refrigerate at least 1 hour.
  • Step 4
    Sprinkle with crushed red pepper flakes just before serving.
