sweet and tangy cucumber salad
I love cucumbers and vinegar and this is just one of the many ways I like to make it. It's a very refreshing way to start a summer meal.

Ingredients
- 1/2 cup sugar
- 1/2 cup hot water
- 1/4 cup white vinegar
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 large cucumber, thinly sliced
- 1 small red onion, thinly sliced
- 1/2 - jalapeno pepper, deseeded and finely diced
- 1 tablespoon cilantro, fresh, roughly chopped
- - crushed redpepper flakes for garnish (optional)
How To Make sweet and tangy cucumber salad

Step 1Whisk sugar, hot water, vinegar, salt and black pepper in a bowl until sugar has dissolved.

Step 2Add the cucumber, onion and cilantro into the vinegar mixture and stir well.

Step 3Refrigerate at least 1 hour.

Step 4Sprinkle with crushed red pepper flakes just before serving.
