superfood salad
Snagged this recipe from the menu of a really nice restaurant that I won't name, but is one of those places that makes everything taste delicious. Not sure which vegetable they were talking about when they said "julienned vegetables" so I use cucumber and carrot.

- quinoa, cooked
- baby spinach
- dried cranberries
- Feta cheese
- grape tomatoes
- avocado
- julienne vegetables
- lemon vinaigrette
How To Make superfood salad

Step 1Rinse & cook quinoa: bring 2 cups water to boil for every cup of quinoa, add quinoa, return to boil, cover and reduce heat to medium and simmer until water is absorbed (about 12 minutes), remove from heat, fluff, cover, and let stand for 15 minutes.

Step 2While quinoa is cooking/standing, julienne vegetables & peel and slice avocado.

Step 3Combine all ingredients and enjoy!
