Snagged this recipe from the menu of a really nice restaurant that I won't name, but is one of those places that makes everything taste delicious. Not sure which vegetable they were talking about when they said "julienned vegetables" so I use cucumber and carrot.

quinoa, cooked

baby spinach

dried cranberries

feta cheese

How To Make superfood salad

1Rinse & cook quinoa: bring 2 cups water to boil for every cup of quinoa, add quinoa, return to boil, cover and reduce heat to medium and simmer until water is absorbed (about 12 minutes), remove from heat, fluff, cover, and let stand for 15 minutes.

2While quinoa is cooking/standing, julienne vegetables & peel and slice avocado.

3Combine all ingredients and enjoy!
