How to Make Superfood Salad
- Rinse & cook quinoa: bring 2 cups water to boil for every cup of quinoa, add quinoa, return to boil, cover and reduce heat to medium and simmer until water is absorbed (about 12 minutes), remove from heat, fluff, cover, and let stand for 15 minutes.
- While quinoa is cooking/standing, julienne vegetables & peel and slice avocado.
- Combine all ingredients and enjoy!
