We try to eat healthy and it seems easier in the Summer with all the wonderful things available to us. This is one my easy, delicious and healthy 'Go-To's'.Adding Black Beans for protein.

Ingredients

  • - 1 lime, zested and juiced
  • - 1 small orange, zested and juiced
  • - 1 bellpepper, diced
  • - 1 jalapeno, seeded, diced
  • - 1 ear fresh corn, cernels cut off cob
  • - 2-3 radishes, sliced
  • - 2 cloves garlic, minced
  • - 1 baby cucumber, cut lenghtwise, sliced
  • - 1/2 red onion, diced
  • - 1 can black beans, drain and rinse
  • - 1-2 tbsp. white wine vinegar
  • - salt to taste.
  • - italian parsley or cilantro and or mint leaves, about a handful, light chop

How To Make summer salad (all summer long)

  • Step 1
    Combine all ingredients in a bowl and toss well. Season with salt to taste. I use about 1-1/2 tsp. Kosher salt. Let it sit on the counter for about an hour if you can. Depending on how juicy your lime is will depend on 1 or 2 TBS> of the vinegar. This keeps well in the refrigerator and I have used it as a side dish or salad.
