I have picky eaters in my family but they like this cassarole. I have also subsituted other veggies in place of the squash.I always use whole wheat crackers in everything.

Ingredients

  • 5 medium yellow squash
  • 1 small sour cream
  • 8 ounces cheddar cheese, shredded
  • 1 package saltine cracker crumbs
  • 2 large eggs
  • 2 tablespoons butter, cold

How To Make squash cassarole

  • Step 1
    Boil squash until fork tender.Pour out in to collinder. Let cool,then chop into bit size pieces.Leave in collinder to allow extra juice to drain off for a few minutes.
  • Step 2
    Beat two eggs together.
  • Step 3
    Crush 1/2 sleeve of saltin crackers.
  • Step 4
    Mix 3/4 package cheese, sour cream ,eggs and crackers together. Add squash and stir.
  • Step 5
    Pour into a medium baking dish . Dot top with butter and spread with remaining cheese.
  • Step 6
    Bake at 350* for 30 minutes
