squash cassarole

I have picky eaters in my family but they like this cassarole. I have also subsituted other veggies in place of the squash.I always use whole wheat crackers in everything.

Ingredients
- 5 medium yellow squash
- 1 small sour cream
- 8 ounces cheddar cheese, shredded
- 1 package saltine cracker crumbs
- 2 large eggs
- 2 tablespoons butter, cold
How To Make squash cassarole

Step 1Boil squash until fork tender.Pour out in to collinder. Let cool,then chop into bit size pieces.Leave in collinder to allow extra juice to drain off for a few minutes.

Step 2Beat two eggs together.

Step 3Crush 1/2 sleeve of saltin crackers.

Step 4Mix 3/4 package cheese, sour cream ,eggs and crackers together. Add squash and stir.

Step 5Pour into a medium baking dish . Dot top with butter and spread with remaining cheese.

Step 6Bake at 350* for 30 minutes
