I have picky eaters in my family but they like this cassarole. I have also subsituted other veggies in place of the squash.I always use whole wheat crackers in everything.

5 medium
yellow squash
1 small
sour cream
8 oz
cheddar cheese, shredded
1 pkg
saltine cracker crumbs
2 large
2 Tbsp
butter, cold

How to Make Squash cassarole


  • 1Boil squash until fork tender.Pour out in to collinder. Let cool,then chop into bit size pieces.Leave in collinder to allow extra juice to drain off for a few minutes.
  • 2Beat two eggs together.
  • 3Crush 1/2 sleeve of saltin crackers.
  • 4Mix 3/4 package cheese, sour cream ,eggs and crackers together. Add squash and stir.
  • 5Pour into a medium baking dish . Dot top with butter and spread with remaining cheese.
  • 6Bake at 350* for 30 minutes
