I have picky eaters in my family but they like this cassarole. I have also subsituted other veggies in place of the squash.I always use whole wheat crackers in everything.

Ingredients

  • 5 medium
    yellow squash
  • 1 small
    sour cream
  • 8 oz
    cheddar cheese, shredded
  • 1 pkg
    saltine cracker crumbs
  • 2 large
    eggs
  • 2 Tbsp
    butter, cold

How to Make Squash cassarole

Step-by-Step

  1. Boil squash until fork tender.Pour out in to collinder. Let cool,then chop into bit size pieces.Leave in collinder to allow extra juice to drain off for a few minutes.
  2. Beat two eggs together.
  3. Crush 1/2 sleeve of saltin crackers.
  4. Mix 3/4 package cheese, sour cream ,eggs and crackers together. Add squash and stir.
  5. Pour into a medium baking dish . Dot top with butter and spread with remaining cheese.
  6. Bake at 350* for 30 minutes
