Ingredients
- 3 cups spring turnips, tops removed and shredded
- 1/2 small carrot, peeled and shredded
- 1/4 cup red bell pepper, seeded and cut into small pieces
- 1/4 cup red onion, peeled and diced small
- 2 tablespoons fresh chives, minced
- 1/4 cup mayonnaise, or a little more
- 1 tablespoon apple cider vinegar
- 2 tablespoons sugar
- - salt, to taste
- - black pepper or white pepper, to taste
- 1/4-1/2 teaspoon cumin seeds, lightly crushed (start with the smaller amount)
- - fresh cilantro, for garnish
- - spring turnip greens
How To Make spring turnip slaw

Step 1In a bowl, combine turnips, carrots, bell pepper, red onion and chives.

Step 2In a separate glass prep bowl or measuring bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt and pepper. I thinned the dressing with a small amount (about 1 T. of milk). Pour over the turnip mixture. Stir well.

Step 3Now stir in the cumin seeds. *Transfer the mixture to a serving platter or bowl. Garnish with fresh cilantro. Cover and chill at several hours for best flavor.

Step 4*If desired, line a serving bowl with spring turnip greens then spoon the slaw over the greens.
