Ingredients For spring turnip slaw

3 cspring turnips, tops removed and shredded

1/2 smcarrot, peeled and shredded
-
1/4 cred bell pepper, seeded and cut into small pieces

1/4 cred onion, peeled and diced small

2 Tbspfresh chives, minced
-
1/4 cmayonnaise, or a little more
-
1 Tbspapple cider vinegar
-
2 Tbspsugar
-
salt, to taste
-
black pepper or white pepper, to taste

1/4-1/2 tspcumin seeds, lightly crushed (start with the smaller amount)

fresh cilantro, for garnish

How To Make spring turnip slaw

1In a bowl, combine turnips, carrots, bell pepper, red onion and chives.

2In a separate glass prep bowl or measuring bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt and pepper. I thinned the dressing with a small amount (about 1 T. of milk). Pour over the turnip mixture. Stir well.

3Now stir in the cumin seeds. *Transfer the mixture to a serving platter or bowl. Garnish with fresh cilantro. Cover and chill at several hours for best flavor.

4*If desired, line a serving bowl with spring turnip greens then spoon the slaw over the greens.
