From a recipe I found on Taste of Home and used as a springboard (pun intended).

Ingredients

  • 3 cups spring turnips, tops removed and shredded
  • 1/2 small carrot, peeled and shredded
  • 1/4 cup red bell pepper, seeded and cut into small pieces
  • 1/4 cup red onion, peeled and diced small
  • 2 tablespoons fresh chives, minced
  • 1/4 cup mayonnaise, or a little more
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons sugar
  • - salt, to taste
  • - black pepper or white pepper, to taste
  • 1/4-1/2 teaspoon cumin seeds, lightly crushed (start with the smaller amount)
  • - fresh cilantro, for garnish
  • - spring turnip greens

How To Make spring turnip slaw

  • Step 1
    In a bowl, combine turnips, carrots, bell pepper, red onion and chives.
  • Step 2
    In a separate glass prep bowl or measuring bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt and pepper. I thinned the dressing with a small amount (about 1 T. of milk). Pour over the turnip mixture. Stir well.
  • Step 3
    Now stir in the cumin seeds. *Transfer the mixture to a serving platter or bowl. Garnish with fresh cilantro. Cover and chill at several hours for best flavor.
  • Step 4
    *If desired, line a serving bowl with spring turnip greens then spoon the slaw over the greens.
