- 2 tablespoons sugar free or less sugar seedless raspberry jam
- 2 1/2 teaspoons red wine vinegar
- 1 teaspoon dijon mustard
- 3 tablespoons olive oil
- 8 cups baby spinach, fresh
- 1 cup fresh raspberries
- 3/4 cup shredded gouda cheese or feta
- 1/2 cup sliced radishes
- 1/3 cup pistachios, toasted or pecans, toasted
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
How To Make spinach salad with raspberry vinaigrette

Step 1Whisk jam in medium bowl until smooth. Add vinegar, mustard, 1/8 teaspoon salt, and 1/8 teaspoon pepper, whisking until thoroughly incorporated. (Dressing can be refrigerated in airtight container for up to 4 days.)

Step 2Toss spinach and dressing in bowl. Add raspberries, Gouda, radishes, pistachios and toss to combine. Serve
