This salad is so light and refreshing, perfect for a summertime salad.

2 Tbsp
sugar free or less sugar seedless raspberry jam
2 1/2 tsp
red wine vinegar
1 tsp
dijon mustard
3 Tbsp
olive oil
8 c
baby spinach, fresh
1 c
fresh raspberries
3/4 c
shredded gouda cheese or feta
1/2 c
sliced radishes
1/3 c
pistachios, toasted or pecans, toasted
1/8 tsp
1/8 tsp


1Whisk jam in medium bowl until smooth. Add vinegar, mustard, 1/8 teaspoon salt, and 1/8 teaspoon pepper, whisking until thoroughly incorporated. (Dressing can be refrigerated in airtight container for up to 4 days.)
2Toss spinach and dressing in bowl. Add raspberries, Gouda, radishes, pistachios and toss to combine. Serve
