Spicy Peanut Quinoa Salad

Deni Elwood

I like to cook the quinoa ahead. I cook a whole box with either chicken broth or with vegetable broth. Then I keep it in the fridge so it's ready whenever I want to throw together a health dish. Always use broth to make your quinoa because it makes it taste so much better.
I was watching a talk show on TV and they had a chef on. He made a dish similar to this and it sounded so good, I threw together the ingredient's I thought would make a nice peanut sauce and added the quinoa and veggies. Now I make this when my kids come to town because they don't eat meat.
Enjoy the taste!
