spicy hana's red lentil salad

Ingredients

  • 1 cup red lentils
  • 1/2 cup colorful grape tomatoes cut in 1/4's
  • 1/2 small red onion, chopped
  • 1 tablespoon capers
  • 1 tablespoon italian parsley, chopped
  • 1 tablespoon mediterranean spice blend
  • 1/2 small habanero pepper, finely chopped
  • VINAIGRETTE
  • 1/4 cup tbsp extra virgin olive oil
  • - juice & zest of 1 lemon
  • 1 - garlic clove, grated
  • - smoked sea salt to taste

How To Make spicy hana's red lentil salad

  • Step 1
    Add lentils and bay leaf to 3 cups of water. Bring to a boil. Reduce to a simmer and cook for 20 minutes or until lentils are tender. Remove drain and cool.
  • Step 2
    Meanwhile, in a jar with a tight fitting lid, combine olive oil, lemon juice, zest, garlic and salt. Cover and shake until well blended. Add lentils and remaining ingredients to a mixing bowl. Pour vinaigrette in bowl and mix well. Transfer to a salad bowl and cover. Chill for at least 1 hour temperature. Bring to room temperature before serving.
