spicy cactus salad

This is a wonderful salad,easy to make that goes well with grilled eats or Mexican food. Make it as spicy as you please. The recipe calls for fresh cheese,I use queso fresco or feta cheese works well too. The original recipe does not call for garlic,I just love garlic and think it works well in this recipe,so it's optional. Some of my friends like to eat this with tortilla chips but I eat it as a salad.

- - 1 33 oz jar natural tender cactus(the brand i use is "embasa"
- - 1/2 c minced onion
- - 1 large tomato,minced
- - cilantro,to taste
- - 1 garlic clove,minced
- - 1/2 c pickled jalapeño slices
- - 1/2 c fresh cheese,crumbled
How To Make spicy cactus salad

Step 1Drain the cactus and jalapeno slices and rinse well.Combine all the ingredients in a large salad bowl.
