Ingredients

  • 2 cans whole kernel corn
  • 1 can black beans, drained and rinsed
  • 1/2 cup red onions, diced
  • 1/2 cup green pepper, diced
  • 2 cloves garlic, minced
  • 1 1/4 cups cilantro, fresh, chopped
  • 1 cup tomatoes, diced
  • 2 tablespoons real bacon bits
  • 3/4 cup reduced fat fiesta blend cheese, shredded
  • DRESSING
  • 1/4 cup fat free sour cream
  • 1/3 cup low fat or fat free mayonaise
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin, ground
  • 1/2 teaspoon mrs dash southwest chipotle seasoning
  • 1/2 teaspoon mrs dash fiesta lime seasoning
  • 1/2 teaspoon salt and pepper

How To Make southwest corn salad

  • Step 1
    put the first 7 ingredients in a bowl
  • Step 2
    mix all ingredients for dressing. Let sit for 5 to 10 minutes
  • Step 3
    pour dressing over vegetables. Stir to coat. Add bacon bits and cheese. Refrigerate until ready to serve
