- 2 cans whole kernel corn
- 1 can black beans, drained and rinsed
- 1/2 cup red onions, diced
- 1/2 cup green pepper, diced
- 2 cloves garlic, minced
- 1 1/4 cups cilantro, fresh, chopped
- 1 cup tomatoes, diced
- 2 tablespoons real bacon bits
- 3/4 cup reduced fat fiesta blend cheese, shredded
- DRESSING
- 1/4 cup fat free sour cream
- 1/3 cup low fat or fat free mayonaise
- 1 teaspoon chili powder
- 1/2 teaspoon cumin, ground
- 1/2 teaspoon mrs dash southwest chipotle seasoning
- 1/2 teaspoon mrs dash fiesta lime seasoning
- 1/2 teaspoon salt and pepper
How To Make southwest corn salad

Step 1put the first 7 ingredients in a bowl

Step 2mix all ingredients for dressing. Let sit for 5 to 10 minutes

Step 3pour dressing over vegetables. Stir to coat. Add bacon bits and cheese. Refrigerate until ready to serve
