This recipe has been in my husband's family for many years. His mom shared the recipe with me before she passed. It has been one of my favorites ever since. Our entire family loves this recipe. This recipe is also in my cookbook. Has been a proven winner whenever we have company, and I make and serve this. I hope you like it too.

Blue Ribbon Recipe

If you need an easy side dish for a summer cookout, make these sour cream and chive cucumbers. The recipe makes a large amount, but it can be halved if needed. Thinly sliced cucumbers are tossed in a sweet and tangy sauce. Dill and green onions are a nice pop of flavor. Super creamy, it's a great way to enjoy fresh cucumbers.

Ingredients

  • 4 cups sour cream
  • 1/4- 1/2 teaspoon granulated garlic powder
  • 1/2 cup sugar (or Splenda)
  • 1 teaspoon dill, more if desired
  • 1 tablespoon dried chives, or use 2-3 Tbsp fresh
  • 1 dash black or white pepper
  • 2 bunches green onions, chopped
  • 4 - 6 large cucumbers
  • additional chives and/or green onions, for garnish

We cut the recipe in half when preparing.
  • Mix sour cream, garlic powder, sugar, dill, chives, black pepper, and green onion.
    Step 1
    Blend sour cream, garlic powder, sugar (or Splenda), dill, chives, black pepper, and chopped green onions until well mixed.
  • Thinly slice cucumbers and add to a bowl.
    Step 2
    Peel and thinly slice the cucumbers. Place them in a large mixing bowl.
  • Stir in the sour cream mixture.
    Step 3
    Add the sour cream mixture to the cucumbers.
  • Mix well.
    Step 4
    Mix well.
  • Cover and refrigerate.
    Step 5
    Cover and refrigerate at least 2 hours before serving.
  • Garnish with chives.
    Step 6
    Garnish with chopped chives or green onion tops.
